Chef Frances and Chef Angelica are now responsible for the crafting of sushi at 3Fils.
Homegrown Dubai restaurant 3Fils has announced the appointment of two new sushi chefs, Frances Sintin and Angelica Fonjock – also known as the chicks behind the chopsticks – who now both play a fundamental role in the sushi kitchen at the humble, small-in-size but big-in-heart Japanese-inspired restaurant in Jumeirah Fishing Harbour.
The two new female sushi chefs join 3Fils’ Executive Chef Shun Shiroma and a team of enthusiastic and driven chefs to serve premium Asian fare heavily influenced by Japanese cuisine that showcases selectively sourced ingredients directly imported from Japan each week.
Joining the team this month following her former role in the Jubilee kitchen at Expo2020, Chef Frances commented on her recent appoint: “I’m focused and ready to prepare every dish to perfection. Joining the 3Fils team is incredibly exciting, especially with the brand being named the best restaurant in the Middle East & North Africa region at the inaugural MENA’s 50 Best Restaurants Awards this year.”
Chef Angelica also joins the team this month, bringing with her a passion for sushi making and sharp skill set for creating irresistible maki rolls – a talent perfected during her culinary career that has seen her work in a number of well known sushi kitchens. Speaking on her appointment, she said: “I’m proud to be further discovering my career in Japanese cuisine at 3Fils, where the kitchen is a quality-driven and inspiring place to be. We are introduced to new techniques and ingredients each day in order to give our guests the best dining experience possible. In my new role, I hope to bring exciting new maki roll combinations to the table to excite the palates of our diners.”
From the sushi counter at 3Fils, guests can expect to find mouthwatering options including long-standing favourites like wagyu + caviar nigiri, otoro nigiri with foie gras, the dragon roll with shrimp tempura, or the spicy tuna roll with samjang and wasabi mayo, plus more.
