Set to lead robust and locally-inspired culinary programs at their respective hotels, Marque Collins serves as executive chef forSurety Hotel— which opens in Des Moines on November 11, 2020 — while Garrison Price is executive chef atDaxton Hotel, debuting February 2021 in Birmingham, Michigan.
Prior to the pandemic, Aparium’s food and beverage offerings generated more than over 40% of the hotel group’s topline revenue. With an ambitious pipeline of six openings over the next two years — arguably the boldest vision for any independent brand at the most challenging time in the history of hospitality — Executive Chefs Collins and Price will play a key role in the brand’s growth.
