Chef Federcio Bartoli introduces new dishes to Monno’s menu

DUBAI, UAE – This August, Jumeirah’s newest artisanal Italian eatery, Monno Ristorante will introduce a collection of new dishes to its menu of wholesome cuisine created with the finest Italian ingredients.

Thoughtfully curated by Italian Head Chef Federcio Bartoli, the new dishes at Monno aim to capture the heart and soul of Italian cuisine, while remaining true and respectful to both ingredient and tradition. 

New additions include the ‘Artic Circle’ – cured artic char carpaccio with smoked butter, served in a mist circle to represent the cool temperatures of the Artic. “This dish showcases artic char – a wild and sustainable fish from the same family as salmon, which is currently over-fished. We cure and smoke the fish in-house to give it a beautiful flavour and aroma that’s pleasing to the palette,” explains chef Federicio.

Another new dish is the ‘Il Cervo tra la Neve’ – venison tartare with truffle snow, red currant ketchup and polenta chips, which draws inspiration from deer grazing in natural elements. “The truffle snow in this dish offers a unique consistency and temperature to excite the taste buds, while homemade red current ketchup adds a touch of acidity to balance the flavours in the venison. To offer a crunchy bite, we dehydrate polenta chips and pop them at a high temperature to create a crackling effect”.

Inspired by Dubai’s craving for burgers, the new ‘Italian Bun’ presents a soft homemade olive oil bun with goose salami, green apple mayo and lollo verde lettuce – a representation of a classic sandwich-style bite you’d find on Italian streets.

In true Italian style, authentic pizzas and pastas also feature on the menu. New additions to try this August include the ‘Fruti di Mare’ pizza – San Marzano DOP tomato sauce, garlic, calamari, shrimps, tomato confit, olives extra virgin olive oil and oregano, and the ‘Risotto, Guancia e Balsamico’ – risotto with castelmagno cheese, slow-cooked beef cheek and balsamic beef jus, and for something a little different, the ‘Carbonara di Tonno’ – homemade spaghetti with bottarga butter and smoked tuna belly.

New dessert, ‘Latte & Miele’, which translates to milk and honey, offers a nostalgic combination with modern execution, comprising honey parfait and cappuccino foam.

Welcoming guests in a charming, casual and rustic space, Monno presents a wholesome and authentic Italian experience for all ages. Soothing music greets upon arrival, while a chilled-out neighbourhood vibe ensures a relaxing visit – whether it be for a leisurely lunch with family, a quick coffee break, or a romantic dinner date with a loved one, Monno is abundant with laidback idyllic moments for everyone.

At Monno, fresh and natural ingredients imported from Italy are carefully calibrated and prepared, to deliver a nostalgic journey of the country’s most cherished culinary traditions. From exclusively using San Marzano tomatoes to importing artisanal Italian cheeses and olive oils for handmade pasta and genuine Neapolitan pizzas, Monno’s menu also features a range of antipasti, main courses and traditional desserts.

Inside Monno, expect interiors and an ambiance inspired by that of a classic Trattoria found on the back streets of quaint towns in Italy. Designed with rustic simplicity in mind, Monno aims to evoke the feeling of being at home for its guests. Comprising a welcoming bar area that features a live pizza oven, a main dining room and covered terrace where natural lighting gleams, the eatery is thoughtfully designed with the use of products that inspire a natural setting like wooden tables and chairs, black and white checkered flooring, olive trees, jade green furnishings and cream linens.

New dishes at Monno are available as of August 1.
