‘Tales from Mexico, the story of the landrace corn’, a masterclass from Chef Shaw Lash is coming to Lila Taqueria as part of the 10th edition of Dubai Food Festival this April
As part of this year’s Dubai Food Festival (DFF), Lila Wood-Fired Taqueria is set to host a series of masterclasses by co-founder Chef Shaw Lash. Titled, ‘Tales from Mexico, the story of the landrace corn’, the foodie experience has been designed by Chef as a 2 hour session to take guests through the traditional processes that go behind making a real corn tortilla, exactly how it’s made at the homegrown taqueria on Jumeirah Beach Road. The masterclass priced at AED 265 per head will be held between 3 PM to 5 PM on April 25th and 26th, as well as the following week on May 2nd and 3rd. Each class will have 6 slots, making this a truly exclusive experience during DFF.
In addition to being the alumnus of Michelin Star Chef Rick Bayless’ kitchen, Chef Shaw has also spent many years working in Mexico’s F&B industry. At Lila Taqueria, she is committed to serving ‘authenticity on a plate’ using only traditional culinary techniques. Through the masterclasses designed for the 10th edition of Dubai Food Festival, Chef Shaw will give customers a peek into the tales of Mexico and the story behind landrace corn which plays a crucial role in the cuisine.
The masterclass will be a combination of storytelling, demonstrations and practical execution to showcase steps that Chef and her team take in order to create a truly authentic tortilla at Lila. Attendees will be walked through the process of how the restaurant grinds its corn in house and nixtamalizes it for the best retention of nutrients. During a live kitchen walk through, Chef Shaw will present other processes that the corn goes through while explaining how each step is closely tied in with traditional culinary techniques of Mexico. Chef Shaw’s knowledge on the cuisine is extensive so in addition to the demonstration and the chance to press their own tortillas, attendees can expect engaging stories about Chef’s journey and the history of the cuisine. The experience will be accompanied by a side of engaging conversation with like-minded foodies and a range of Lila Taqueria’s loved Mexican food and beverages to snack on.
With the Dubai Food Festival showcasing the emirate’s emergence as the region’s gastronomy capital, it is safe to say that Chef Shaw’s participation will only elevate the diversity and creativity that the program is offering to the foodies in the region. Guests attending the masterclass, scheduled to be hosted on April 25th, April 26th, May 2nd and May 3rd, are in for a unique experience which is not just educational but also highly inspirational.
